Dragon Breath Salad
This is a favorite for all those garlic lovers out there. You can control the dragon level based on how much garlic you use. My household loves a strong garlic flavor. We’re breathing that garlic fire breath on a regular basis. You can’t tell when everyone has garlic breath.
Ingredients:
1/2 cup Fresh lemon juice (meyer lemon is best)
1/2 cup Extra Virgin Olive Oil
4 cloves pressed fresh garlic
Shredded Parmigiano Reggiano Cheese (to taste)
Fresh Ground Pepper (to taste)
Fresh Kale
Fresh Arugula
Fresh Spinach
Directions:
To make the Dressing:
Combine lemon juice, olive oil, and minced garlic. Scale this up or down to what suits you. I like to make a lot in a jar and keep it in the fridge for easy use. I rarely measure anything, simply mix 1 part lemon juice with 1 part extra virgin olive oil (yes, use fresh lemon and good olive oil, it makes a big difference) and add as much pressed fresh garlic as you like. In all honestly I probably use 8-10 cloves. Grind in some fresh pepper and mix. I make in a jar so I can close it and shake it together.
Wash and mix all of your greens. Toss in your dressing and shred Parmigiano Reggiano to your liking. Now, I highly recommend the Kirkland brand, it’s delicious, but you can use anything. Try to stay away from pre-shredded Parm, it sucks. Quality ingredients make a quality salad. Food matters people, eat the good stuff.
That’s it! Super simple and delicious. The dressing also makes an incredible base for a plethora of other dressings. It save well in the fridge so make a lot and eat your greens.
