Burger Bowls
These are so delicious, it’s like eating a gourmet Big Mac, without the bun and WAY healthier. Bonus! The ingredients are kid friendly, and were devoured by my 1 year old.
Ingredients:
10 oz Romaine Lettuce
10 Cherry Tomatoes
1 Medium White Onion
1 lb Ground Beef
Potatoes
1 cup Pickles diced (I prefer chilled Claussen pickles)
1 cup Cheese if desired
For the Sauce:
1/3 cup Mayonnaise
2 tbsp Ketchup
1 tbsp Yellow Mustard
1 tbsp Pickle Juice
1 tsp Worchestershire sauce
1/4 tsp Paprika
1/4 tsp Onion Powder
1/4 tsp Garlic Powder
Directions:
Heat olive oil in a large pan as you dice your onion. Add onion to pan and stir until onion is transparent. Add ground beef. Stir and break up beef until fully brown.
While beef is cooking, wash and cut potatoes into desired shape. If you want a “french fry” look cut into long strips. I used small round golden potatoes, so I made thin slices. With potato slices in a bowl, drizzle with olive oil, salt and pepper. Toss in bowl and add a little more salt and pepper. Spread evenly on a baking sheet. Bake at 350 for 10 minutes, stir, then bake for an additional 10 minutes. If you cut larger pieces you may need to add an additional 10-15 minutes to get the desired crispness. *Bonus, I have an air fryer that I used on “air roast” which gets the potatoes nice and crispy.
Make dressing: mix ingredients in a bowl and stir until mixed. If you want it to be thinner, add more pickle juice.
Cut lettuce, tomatoes, and pickles as desired.
Top your bowl of lettuce with your tomatoes, pickle, beef, and potatoes. Drizzle with your sauce and dig in!
This worked out great for a meal that was great for the parents and my your son. The items were already sliced up small for him, so I served us both up and we enjoyed a really nice meal together (felt like magic to enjoy a meal alongside my toddler).
